Gluten Cross-Contact in Shared Fryers: What Four Studies (Two FDA-Led) Tell Us.
Gluten Cross-Contact in Shared Fryers: What Four Studies (Two FDA-Led) Tell Us.
Gluten Free Watchdog’s Bottom Line When It Comes to Shared Fryers and Gluten Cross-Contact (after looking at all four studies):
1. Gluten cross-contact can and does occur when gluten-free foods are cooked in shared fryers with wheat (1-4).
2. Deep frying makes gluten harder to detect. Test results, including those from the sandwich R5 ELISA, may underestimate how much gluten is actually present (1,3).
3. Daily oil change is good but still doesn’t solve the problem of accumulating gluten during the hours between changes–An optimized filtration system would help (3,4).
4. When fries do contain quantifiable levels of gluten, especially at or above 20 ppm, the total gluten load can add up fast (see illustration below) (1).
5. You must make your own decision about whether to eat fries (or any other naturally gluten-free food) cooked in a shared fryer with wheat—But the information you use to make this decision should be as complete as possible.
6. Quality of life is so very important and not having to worry about cross-contact would be a relief—But quality of life cuts both ways. Feeling sick after a gluten exposure affects quality of life too.
